Artichoke, Spinach, and Feta Cheese Omelette Empty Artichoke, Spinach, and Feta Cheese Omelette

Ingredients:
1 egg yolk and 2 egg whites 2 chopped artichoke hearts 1/2 cup chopped spinach (thawed or fresh) 1/3 cup crumbled feta cheese Grease spray (PAM or Crisco)

Directions:
Preheat a small skillet pan on medium heat. Whisk the eggs together and add a splash of water. Once the pan is warm, spread the egg mixture onto the skillet, coating the entire pan. Using a spatula, lift the sides and tilt the pan so that any raw egg will fold underneath the cooked egg. Spread the artichoke hearts, spinach, and feta cheese. Cook about 3-4 minutes or until the bottom is barely golden. Using a spatula, flip the empty side onto the veggie side and slide omelette onto a plate, enjoy!

Notes:
The key is to cook the omelette on a low-medium heat. This ensure the eggs get cooked throughout without over-cooking.
