Roasted Walnuts--Jessica Ostheim
1-1/2 cups sugar
1 tsp. salt
3 tsp. cinnamon
1 egg white
1 tsp. vanilla
1 pound walnuts
Mix sugar, salt, and cinnamon in a plastic bag and set aside. Beat egg white and vanilla with a mixer until foamy. Add walnuts to the foam and mix until well coated. Add coated walnuts to the sugar mixture and shake in bag until covered. (Divide the walnuts 5 or 6 times to have only a small amount of walnuts in the bag at a time.) Place the walnuts on a buttered cookie sheet. Bake 1 hour at 225 degrees, stirring every 20 minutes. Let cool. Break nuts apart while cooling.
