Cinnamon Applesauce Muffins Empty Cinnamon Applesauce Muffins

These muffins are good for breakfast, snacks or dessert!

Ingredients: 1/3 cup vegetable oil, 1/3 cup packed brown sugar, 4 egg whites, 1 1/2 cups unsweetened applesauce, 2 cups flour (can also use whole-wheat flour if desired), 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg

Preparation time: 15 min, Cooking time: 20 minutes, Yield: 12 muffins

Directions:Preheat the oen to 375 degrees. In a medium bowl, whisk together the oil, sugar, and egg whites. Add the applesauce and blend well with a whisk or electric mixer. Add the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Fold the dry ingredients into the wet ingredients with quick strokes - be careful not to overmix. Spoon the batter into lined or oiled muffin cups (2/3 full) and bake for 20 minutes, or until muffins are golden brown. When cool enough to handle, remove muffins from cups. Enjoy!
