Cinnamon Pancakes Empty Cinnamon Pancakes

Ingredients:
yields 8 servings
1 and 1/4 cup whole wheat flour
1 tsp baking soda
2 T Splenda
1 cup skim milk
1/2 cup egg beaters
1 T vanilla extract
2 T cinnamon

Directions
1) Mix flour, baking soda, and Splenda in a bowl
2) In a separate bowl, mix milk, eggs and vanilla
3) Beat wet mixture into the dry mix roughly, so as to add more air into the mix
4) Add cinnamon
5) Take 1/3 cup of batter and put on skillet treated with no-stick spray
6) Cook until one side is golden brown, flip and repeat
serve with fruit, syrup, etc.
